Omelet With Smoked Tofu And Veggies

2 eggs, beaten
1/3 cup cherry tomatoes, chopped
1 bell pepper, seeded and chopped
1/3 teaspoon freshly ground black pepper
1/2 purple onion, peeled and sliced
1 teaspoon smoked cayenne pepper
5 medium-sized eggs, well-beaten
1/3 cup smoked tofu, crumbled
1 teaspoon seasoned salt
1 1/2 tablespoons fresh chives, chopped


  1. Brush a baking dish with a spray coating.
  2. Throw all ingredients, minus fresh chives, into the baking dish; give it a good
