Masala-style Baked Eggs

6 medium-sized eggs, beaten
1 teaspoon garam masala
1 cup scallions, finely chopped
3 cloves garlic, finely minced
2 cups leftover chicken, shredded
2 tablespoons sesame oil
Hot sauce, for drizzling
1 teaspoon turmeric
1 teaspoon mixed peppercorns, freshly cracked
1 teaspoon kosher salt
1/3 teaspoon smoked paprika


  1. Warm sesame oil in a sauté pan over a moderate flame; then, sauté the
    scallions together with garlic until just fragrant; it takes about 5 minutes. Now,
    throw in leftover chicken and stir until thoroughly warmed.
  2. In a medium-sized bowl or a measuring cup, thoroughly combine the eggs
    with all seasonings.
  3. Then, coat the inside of six oven safe ramekins with a nonstick cooking spray.
    Divide the egg/chicken mixture among your ramekins.
  4. Air-fry approximately 18 minutes at 355 degrees F. Drizzle with hot sauce
    and eat warm.
