Double Cheese Asparagus Casserole

1 cup cauliflower rice
1/3 cup milk
1/3 cup Colby cheese, grated
1 1/2 cups white mushrooms, sliced
2 asparagus spears, chopped
1 teaspoon table salt, or to taste
2 well-beaten eggs
1/3 teaspoon smoked cayenne pepper
1 teaspoon ground black pepper, or to taste
1/3 teaspoon dried rosemary, crushed
- Throw the cauliflower rice into the baking dish.
- In a mixing dish, thoroughly combine the eggs and milk. Stir in 1/2 of cheese;
add the seasonings. Pour 3/4 of egg/cheese mixture over the bread cubes in the
baking dish; press gently using a wide spatula.
- Now, top with the mushrooms and chopped asparagus. Pour the remaining
egg/cheese mixture over the top; make sure to spread it evenly.
- Top with the remaining Colby cheese and bake for 20 minutes at 325 degrees
