Breakfast Muffins With Mushrooms And Goat Cheese

2 tablespoons butter, melted
1 yellow onion, chopped
2 garlic cloves, minced
1 cup brown mushrooms, sliced
Sea salt and ground black pepper, to taste
1 teaspoon fresh basil
8 eggs, lightly whisked
6 tablespoons goat cheese, crumbled
- Start by preheating your Air Fryer to 330 degrees F. Now, spritz a 6-tin
muffin tin with cooking spray.
- Melt the butter in a heavy-bottomed skillet over medium-high heat. Sauté the
onions, garlic, and mushrooms until just tender and fragrant.
- Add the salt, black pepper, and basil and remove from heat. Divide out the
sautéed mixture into the muffin tin.
- Pour the whisked eggs on top and top with the goat cheese. Bake for 20
minutes rotating the pan halfway through the cooking time. Bon appétit!
