1 cup almond milk, unsweetened
2 tbsp. honey
1 tbsp. coconut oil, melted
1 tsp vanilla
½ cup zucchini, grated
1 ½ cup oat flour
2 tsp cinnamon
1 tsp baking powder
¼ tsp salt
Nonstick cooking spray
- In a large bowl, combine milk, egg, honey, oil, vanilla, and zucchini.
- In a separate bowl, stir together remaining ingredients. Add to zucchini mixture
and mix just until combined.
- Spray the cooking pot with cooking spray. Set to sauté on medium heat.
- Pour batter, ¼ cup at a time, into cooking pot. Cook 3-4 minutes or until bubble
form in the middle. Flip and cook another 2-3 minutes. Repeat with remaining batter.
Serve immediately with your favorite toppings.
